Albillo Real and Grenache are our main varieties. Settled on sandy granitic soils of various types and textures, variable depths and looseness and occasionally slate soils as well as different altitudes ranging between 650-1070 meters, these varieties offer us a wide range of possibilities which is translated into great complex wines.
We harvest all our grapes in 20kg boxes ensuring great sanitary condition, coordinating harvest separately from start to finish in each subregion inside Cebreros village hoping to achieve the best balance between ripeness and freshness for each of our terroir-driven wines.
All our grapes are cooled down to 0 ºC before processing. We believe this is very important in order to achieve a better fermentation process and allow indigenous yeast to work on producing different flavors and aromas throughout fermentation which will result in unique wines. Our work is focused on applying different winemaking techniques to obtain the best results possible, whether it means, for example, direct pressing of grapes or whole cluster fermentation, always taking on account what`s best according to the origin of each vineyard.
We prefer spontaneous fermentation with temperature control, on concrete tanks mostly, but we also use stainless steel for some wines.
As for aging we prioritize the use of large size oak casks between 20 to 150hl and different foudres as well, so that impact of oak is gentler on the wine preserving the fruit and allowing for expression of terroir.
