SINGULAR WINE

Grapes: Garnacha 100%.
Area: old vineyards singular “paraje” DOP Cebreros village-Sierra de Gredos.
Wine type: aged red wine.
Vineyard: bush old vines, in poor granitic sandy soils, at 900-920 meters above sea level.
Wine making: spontaneous fermentation in concrete tanks. 15% with whole bunches, at controlled temperature between 18-26 ºC. Aged in wooden slovenian “foudres” of 100 hl. (mastro bottaio cooper), where stay for 12 months. malolactic fermentation happends naturally during spring. light filtering and bottling with a very low level of SO2
Tasting notes: bright and clean cherry color with a medium-low intensity. remarkable floral and spicy notes in the nose, with a mediterranean character. In the mouth has a good intensity and body blended with a lovely finesse and elegancy that talk about some very good evolution in the bottle. to be served at 12-14 ºC
Temperature to serve: 12-14 ºC.
